Easy Jerk Shrimp Tacos with Hidden Veggies

Here's the healthy stuff! These tacos are flavorful, fresh, and sneakily veggieful. Basically, they are perfect for January.  You have jerk-seasoned shrimp, bringing the spice, with mango and pineapple salsa, bringing the sunshine, all tucked in a crispy baked tortilla of zucchini, bringing the green. 

Wait, what?

Yep, that's right, these tortillas are about 90% veggies, translating to a tasty meal that only feels indulgent. They are also super easy, needing only a few ingredients and some shredding patience (or a food processor), and if you buy the pineapple and mango pre-sliced and your marinade pre-made (I know, but I'll make it from scratch if you can tell me where to buy scotch bonnet peppers), then you can have these tacos ready in no time.

And since they are basically 1000% fruit and veggies, definitely pair them with a nice, cold beer on the side. It may be January but you still need to live a little!

Easy Jerk Shrimp Tacos with Hidden Veggies

Makes 8 tacos

8 zucchini taco shells (from White on Rice Couple)
1/2 recipe Pineapple Mango Salsa (from The Pioneer Woman)
1 lb peeled and deveined shrimp, coated in your favorite Jerk seasoning or marinade

  1. Make tacos and salsa according to recipes, set aside.
  2. Saute or grill shrimp until opaque and just cooked through, about 5 minutes.
  3. Assemble tacos and enjoy!
