Green Curry Baked Sweet Potatoes

File these under "crazy easy weeknight meals."

I promise, all you need is a handful of ingredients and an hour, most of which can be spent sitting on your couch as the aroma of baking sweet potatoes fills your house. You're welcome.

Did I mention this meal is entirely plant-based? Or that it's full of veggies and good fats and flavor? We are two weeks into January now so I guess it's time to get on the health train with everyone else. However, there is no reason to deprive ourselves in the process. We get perfectly baked sweet potatoes, spicy green curry coconut sauce, and greens for health. Top them with your favorite combo of cooling and crunchy garnishes and you've got something fancy-ish for almost no effort.

These potatoes are filling, hearty, and the ultimate comfort meal if, like mine, your current outdoors environment is busy ending a 5-year drought.   

Baked Sweet Potatoes
Cilantro Peanut Lime Garnishes

Green Curry Baked Sweet Potatoes

  • 4 sweet potatoes (medium-sized)
  • 2-4 tbs green curry paste (to preferred spice level, see note)
  • 2 tsp coconut sugar (or brown sugar)
  • 1 can coconut milk
  • 6 cups baby spinach
  • juice of 1 lime
  • cilantro, chopped, for garnish
  • peanuts, chopped, for garnish (or toasted coconut, something crunchy)
  • lime wedges, for serving
  1. Bake potatoes: heat oven to 400 degrees. Pierce potatoes all over with a fork. Bake on a foil-lined baking sheet for 45 minutes to 1 hour, or until easily pierced with a fork.
  2. While potatoes bake, make curry sauce. Saute curry paste in a little oil for a few minutes until very fragrant. Add the coconut milk solids and fry for a minute or so, then whisk in sugar and the liquid. Cook for 10-15 minutes on medium-low until thickened. Stir in the spinach until wilted and stir in the lime juice.
  3. To serve, spoon the greens and sauce over the potatoes and garnish with cilantro and peanuts. Serve with lime wedges.

Notes:

  • Most likely the green curry paste you will most easily find is the Thai Kitchen stuff sold in a small jar at your local major grocery chain. This will do, but if you want real flavor, it's best to seek out the stuff in a can sold in most Asian grocery stores or online.
  • If you want to add some protein to these, you could add in some cooked chickpeas or shredded chicken with the spinach.
